Chili's Salsa


Sorry for the terrible picture, I had to snap a shot before Jeff ran off with the bowl. 

I got the recipe here.

2 cans whole tomatoes, drained
1 small can diced jalapenos
1/2 cup yellow onion, diced
1/2 tsp salt
1 tsp cumin
1/2 tsp sugar
1 tsp lime juice

Blend all ingredients in a blender until smooth. It has a kick to it, so if you are not a spicy fan, maybe reduce the amount of jalapenos you add. Jeff likes spice, so we added the whole can.

Enchisagna



Jeff loves enchiladas and lasagna. How about mixing the two and making this delicious meal?

2 TBS olive oil
1 pound chicken breast cut into bite sized chunks
5 cups cheese (Mexican blend or whatever you have on hand)
1 can cream of celery soup
1 can cream of chicken soup
1 1/2 cup sour cream
1 small can chopped green chilies
Small corn tortillas ( I used about 12)
Salt
Pepper

Preheat your oven to 425 degrees.

Brown your chicken in the olive oil, over the stove top. In a medium bowl combine soups, sour cream and green chilies.

Now onto the lasagna potion of our meal. Spoon some of the soup mixture in the bottom of a baking dish. I used a 9x 13 glass dish. Layer a few tortillas on top. Spoon more mixture, chicken and then some cheese. Repeat these layers, finishing with soup mixture and more cheese.

Bake in oven for 20 minutes or until cheese on top is melted.

Smith Family Taco Salad

1 can kidney beans, drained
1 pound beef or turkey browned with taco seasoning (per pkg instructions)
Lettuce
Tomato
Sliced avocado
Shredded cheese
Taco sauce
Tortilla chips
Ranch dressing

Brown meat. That is the only thing you have to cook. On plate, put lettuce, add beef, kidney beans and top with your favorite taco toppings. Top with ranch dressing.

Arizona Chili

2 chicken breasts, cut in thin strips
1 onion, chopped
2 cloves garlic, crushed
1 tbs olive oil
1 can chili style chunky tomatoes
1 can black beans
1 (4oz) can diced green chilis

In a large sauce pan cook chicken, onion & garlic in oil until chicken is no longer pink. Drain. Add chilis, tomatoes and beans. Simmer on low 10 minutes.

Pork Burritos

Pork round
1 (16 oz) jar salsa medium
3 tbs garlic (from the jar, people)
4 beef bullion cubes

Put all ingredients in a crock pot. Cook on low 6-8 hours. (I forgot and did it at lunch on high for 5 hours) Fill your tortilla and top with your favorites- cheese, sour cream, lettuce, etc.

Creamy Chicken Tacos

You can use this as filling for your burritos or as a dip with tortillas

3-4 chicken breasts, cooked & diced
1 pkg cream cheese
1 4oz can diced green chilis
1 pkg taco seasoning

Mix cream cheese, chilis and taco seasoning until cream cheese is melted. Add chicken and let simmer for 5 minutes. Fill your burrito or dip with chips. MMM

Cafe Rio Chicken

1 small bottle Zesty Italian dressing
1 T chili powder (or to taste)
3 cloves garlic (minced)- I use the jar stuff
3-4 chicken breasts

Combine all ingredients in the crock pot. Cook on low for 4 hours. Shred meat and let cook 1 more hour.

Fill your tortilla and top with your favorite toppings .

Navajo Tacos (Fry Bread)

4 cups flour
4 tsp baking powder
1 tsp salt
2 2/3 cup warm water

shortening for frying

Combine flour salt and baking powder in a bowl. Add enough warm water to make a soft dough. Knead thoroughly, cover and let dough rest for a half an hour. Dough should be soft but not sticky. Pinch off dough about the size of an egg. Shape it round and flat and 8-9 inches in diameter. Melt shortening in large frying pan. Fry bread in pan until brown on each side.

Warm 3 cans chili.

Top bread with chili, cheese, tomatoes, lettuce, salsa and sour cream. YUM!

Green Chili Chicken Casserole

2 cans cream of chicken soup
1 (16oz) sour cream
1 (4oz) can diced green chilis
12 corn tortillas (cut in strips)
2 cups cheddar cheese
2 cups chicken cooked and cubed

Mix together soup, sour cream, chilis and chicken. In a 9x13 pan spoon some soup mixture on the bottom. Cover with cheese, then tortillas. Repeat in layers. Top with cheese. Cover with foil and bake at 350 degrees for 50 to 60 minutes. Remove foil for the last 15 minutes.

Chicken Tacos

1 can chicken (located by the tuna)
1 can white beans
1 pkg taco seasoning
medium size tortillas
anything you like to put on your tacos
Put chicken, beans and taco seasoning in a pan and let simmer until most of the liquid evaporates. Spoon out on to tortillas and top with your favorite toppings. Yummy.
